Advice on updating 3 rooted Galaxy S5 phones to latest touchwiz (rootable)

Looking for advice on updating 3 rooted Galaxy S5 phones, specs below. What is the latest touchwiz rom I can goto which is rootable? Its been a long time since I've messed with them after rooting, so need to read up on all the steps... Are there any gotchas, or versions I should steer clear of?
